Whilst I may not be the BEST chef, I can make a meaaaaan artichoke dip. Here's the recipe, passed down from my mother, and a guarantee winner at your super bowl party this year. Unless you're going to watch it at a crowded bar, then I'm sorry, and that blows.
The BEST part, is there are only four ingredients. Super easy, just how I like it:
- 2 cans artichoke hearts
- 1 bag shredded mozzarella
- 1 bag shredded parmesan
- 1 1/2 cup mayonnaise
First, preheat oven to 350 degrees.
Next you'll need to chop the artichoke hearts. Cut them in 4 slices lengthwise. Make sure to use an unnecessarily large knife like I do...
After you've chopped and slapped, add them to a large mixing bowl where you'll add the other ingredients.
Next, add the whole bag of mozzarella, thats right, the whoooole bag, after eating 2 or 3 handfuls of it first of course.
Then, you guessed it, add the whole container of parmesan. I usually make it with shredded parm but my ghetto Key Foods grocery store ran out, so grated it is.
Now for a healthy heaping of mayonnaise. If you don't like mayo.... GET over it, it's the greatest condiment out there besides honey mustard. Grow up.
The 1 and 1/2 cup measure is just an approximate, add just as much as you need until it gets a nice creamy consistency
Now stir it all together until it comes to said consistency.
Transfer the dip to a microwavable bowl or tin container if you plan on bringing it somewhere and bake it for about 20-25 minutes.
Once you see the edges and the top turning golden brown, it's done! Voila, take out, enjoy and eat!
Ooh oh and a major chip reccomendation would be Stacy's MultiGrain Pita Chips. Not trying to be healthy with the multigrain or anything (as you can see by the use of mayo) I just find it has more flavor than the regular kind.
